  3. 1 10oz can Diced Tomatoes &Green Chilies

  4. 1/4 Onion Diced

  5. 1 med sized bell pepper or handful of baby bell peppers

  6. Small head of butter lettuce

INSTRUCTIONS:

  1. Combine all ingredients except lettuce into Rockcrok Dutch Oven or into small covered microwavable bowl.

  2. Microwave for on high for 15min.

  3. Take out and scoop up mixture and fill each lettuce leaf.

  4. Add any toppings you might like and enjoy!

Notes:

  1. You can add shredded cheese, sliced olives, and plain Greek yogurt for toppings.

  2. I kinda wrap them up like a burrito to eat.

  3. You can make some Mexican/plain rice too to make this a little more filling.

I love my Rockcrok it is a Pampered Chef product and it comes in several different sizes. It makes the best chicken it is always perfectly tender and moist. The investment is totally worth it you can even make a cake in it or veggie noodles. I haven’t been able to find another piece like it that works just as well every time I cook in it. Ok that’s my 2 cents on that subject.

Now why did I pick lettuce for this recipe? Well it’s very hard to find tortillas with out soy in them. This is a fun, light alternative to flour or corn tortillas.
