Cinnamon Cheerio Cran-Crunch

Writer: Amanda ElstsAmanda Elsts

When it comes to food with Wilson’s we have a lot of “I Can’ts”, but there are still a lot of “I Cans”. It took me a while to get my focus on the “Cans” and off the “Can’ts”. I think the hardest part was to let go of what I knew and my go to foods and embrace the adventure waiting there in the kitchen for me. Yeah it was kind of daunting at first and crazy frustrating at times, but the outcome was totally worth it! I could finally have a tasty sweet treat with no soy or chocolate; not only that it’s not too bad health wise for me. The original recipe called for peanuts now pretzel bits, raisins now Crasins, brown sugar now honey, maple syrup, cinnamon, and vanilla. Yeah so not even close to the original, but through a lot of trial and error we finally came up with yummy snack! So I hope you enjoy and I’d love to hear your thoughts on the snack and see some pictures!

Ingredients

  1. 6 C Cheerios

  2. 2 C Broken Pretzels

  3. 1 ½ C Dried Cranberries

  4. 2 Tbsp. Butter

  5. ¼ C Honey

  6. 1/8 C Maple Syrup

  7. 1 tsp Cinnamon

  8. ½ tsp Vanilla

  9. ½ tsp Salt

  10. ½ tsp Baking Soda

Instructions

  1. Pre-heat oven to 275° F

  2. Grease 2 13x9x2 rectangle pan or 1 jellyroll pan 15 ½ x 10 ½ 1.

  3. In 4 quart bowl mix Cheerios, pretzels and dried cranberries; set aside

  4. Heat Butter, honey, maple syrup, vanilla, & salt in 1 qt. sauce pan over medium heat.

  5. Stir constantly until bubbly around edges.

  6. Cook uncovered, stirring occasionally 2 min. longer.

  7. Remove from heat; stir in baking soda until foamy and light colored.

  8. Pour over cereal mix. Stir until coated.

  9. Spread evenly in pan. Bake 15min.

  10. Let stand on cooling rack until cool; about 10min. Loosen with spatula.

  11. Let stand and firm about 30min. Break into bite size pieces and store back in 4qt. bowl.

Tip

  1. If you are using stoneware you don’t need to grease the pan.

  2. I like to use a metal spatula when breaking it up.
